Chorizo And Mushroom Bruschetta Recipe

In this episode of Simply Sublime chef Tess ward shows you how to make tasty Mediterranean style chorizo and mushroom bruschetta. These are perfect for lunch or as a tapa with a glass of wine

 

Ingredients

  • 100 g chorizo
  • 100 g mushrooms
  • 150 g cannelinni beans, cooked
  • 2 tsp fresh thyme
  • 8 thick slices of ciabatta bread
  • 1 clove of garlic, peeled
  • 1 tbsp olive oil, plus more for drizzling

Cooking Directions

  •  Cook The Chorizo And Mushroom

Slice the chorizo and mushrooms, and fry them with a tablespoon of olive oil for a few minutes. Once the mushrooms are soft add the drained and rinsed beans, fresh thyme and pepper. Add a dash of water if it looks a bit dry.

  • Toast The Bread

Whilst the beans are warming up grill the bread. Once cooked rub each piece of toast with garlic and drizzle with olive oil. Place a little of the chorizo and mushrooms on each piece of toast and finish with a drizzle of olive oil, a few thyme leaves and a bit of pepper.
