Top Chef Caroline Mili Artiss teaches users how to make authentic ayam goreng This fried chicken dish is packed with delicious chilli flavours curry leaves and shallots Enjoy with noodles or rice

Ingredients

  • 1 egg
  • 1 cornflour
  • 1 tsp sesame oil
  • freshly chopped chilli
  • garlic granuals
  • salt
  • pepper
  • 400 g chicken breasts, sliced
  • curry leaves, finely chopped
  • crispy shallots

Cooking Directions

Step 1: Make the Marinade

Slice the chicken breasts, add to a bowl. Add 1 tsp of sesame oil, 1 tbsp cornflour and crack-in 1 egg. Mix together. Add a pinch of salt, some garlic granules and a pinch of pepper. Finely slice your curry leaves and add to the bowl. Leave for 30 minutes to marinade.

Step 2: Fry the Chicken

Once chicken is marinated, heat 6 tbsp oil in a wok/large frying pan until very hot. Take a separate small bowl, fill with 3-4 tbsp plain flour. Then take individual chicken pieces, coat with the flour and add to the wok. Make sure the pieces are spaced out to ensure crispiness.

Step 3: Brown the Chicken, Garnish and Serve

Once the chicken pieces are brown on one side, turn and brown on the other. When the chicken is nice and crispy, remove and place on a paper towel to drain any excess oil. Garnish with some chopped up chilli and crispy shallots. Serve.
