Pickled Red Onions

Pickled red onions makes a great topping for sandwiches, burgers, and tacos.


  • ½ cup apple cider vinegar
  • ½ cup water
  •  ⅓ cup sugar
  •  ½ tsp. black peppercorns
  •  ½ tsp. salt
  •  6 whole allspice
  • 1 small clove garlic, peeled
  •  1 small bay leaf
  •  1 large red onion, halved and thinly sliced (2 cups)



  • Boil vinegar, 1/2 cup water, sugar, peppercorns, salt, allspice, garlic, and bay leaf.
  • Add onion slices, and return to a boil.
  • Remove from heat, and transfer to a container.
  • Cover, and cool.
  • Let stand at room temperature 24 hours before serving.
  • Onions will keep up to 2 weeks in refrigerator .
